This mango–passion fruit chia pudding is a fiber-rich tropical delight! Chia seeds pack omega-3 fatty acids plus a punch of fiber, promoting a healthy gut, while passion fruit and mango add a naturally sweet, tangy flavor. Coconut milk builds on the tropical vibes, making it a refreshing and satisfying choice for breakfast.

Ingredients

  • 3 cups unsweetened coconut milk beverage

  • 1 cup frozen passion fruit

  • 1 cup frozen mango chunks, divided

  • 1 teaspoon ground turmeric

  • ¾ cup chia seeds

  • 2½ tablespoons pure maple syrup

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

  • ¼ cup toasted unsweetened coconut chips

Method

  1. Place 3 cups coconut milk, 1 cup frozen passion fruit, ½ cup frozen mango and 1 teaspoon turmeric in a blender; process until smooth, about 30 seconds. Transfer to a medium bowl.
