This is a typical Cuban chicken fricassee dish. It's easy to make and quite tasty. This goes best over white rice and some fried plantains.

Ingredients

  • 1 large onion, chopped

  • 6 cloves garlic, chopped

  • ½ green bell pepper, chopped

  • 8 small whole peeled potatoes

  • 1 (8 ounce) can tomato sauce

  • ½ cup dry white wine

  • ½ tablespoon cumin

  • 1 leaf fresh sage

  • salt and pepper to taste

  • 2 pounds chicken leg quarters

Method

  1. Combine onion, garlic, bell pepper, and potatoes in a medium bowl. Stir in tomato sauce and wine; season with cumin, sage leaf, salt, and pepper.

  2. Place chicken legs in the slow cooker. Pour onion mixture over chicken.

  3. Cover and cook on Low until juices run clear, 6 to 8 hours.
